Happy Tuesday! Yesterday was a wonderful day! It rained and stormed almost the entire evening….. it was beautiful~ I loved it! The morning was so lovely so we got to play outside quite a bit and then to end on storms… LOVELY! Thanks everyone for your sweet comments from yesterdays post. This past weekend for young women,( a youth program from our church, you can find out more about it HERE) The young women made baskets for mothers day and sold them to earn money for girls camp. I made some truffles to add to the baskets. These are my favorite truffles, I have made these for a few weddings and big birthday parties. They are so easy to make and so delicious! I have made them for little just because gifts for friends, they are great for that!
Okay, so get ready! I will share the picture recipe and then written one below!
Your ingredients are:
One package 8 oz of softened cream cheese.
1/2 Teaspoon of Pure almond extract.
Cream all of these ingredients together! Sorry I don’t have a picture of that! I lost a few! Cream them together until smooth.
Over a double boiler, melt 4 oz of semi sweet chocolate. You can use chocolate chips or the squares. I used the chocolate chips well, because they are cheaper! Get the real chocolate chips! VERY IMPORTANT!
After the chocolate is melted, add a little bit of the cream cheese mixture and stir well. This will temper the chocolate to mix well with the rest of the cream cheese. Otherwise it may seize up and then it is ruined! After you have mixed the little bit very well, fold in the rest of the cream cheese.
Add 1/4 cup of TOASTED,GROUND slivered almonds. You will want to toast them first. Then grind them up, your blender is great for this or a food processor. After they are ground up then measure 1/4 cup of almonds. Stir those in the chocolate mixture. Make a little extra and save them for later!
Now you put that deliciousness in the fridge and let it rest for at least two hours… you may lick a spoon though………. it is that good!
Scoop out the chocolate mixture with a mini scoop, or any spoon that is the size you want! My favorite is the pampered chef mini scoop. Roll the balls in the ground almonds. You could also roll them in cocoa powder, crushed pistachios, anything you love really!
You can wrap them in little wrappers or they are perfect size for a mini cupcake liner…….. Store them in an airtight container in the fridge! I hope you enjoy!!

1 8oz of softened cream cheese
1 tablespoon of honey
1/ teaspoon pure almond extract
4 ounces of semi sweet chocolate
1/4 cup TOASTED and GROUND ( remember toast and grind then measure) Make a little extra for rolling
Beat cream cheese , honey and almond until smooth.
Melt chocolate in double boiler and temper chocolate by adding just a little of the cream cheese mixture, once well mixed. Stir in remaining chocolate.
Stir in crushed almonds
Let set up in fridge for at least two hours
Roll into balls, the size you want, I like teaspoon size.
Roll in ground nuts, cocoa powder, anything you really want!
Store airtight in fridge!
