It is Wednesday! The week is halfway over… not sure how I feel about that! haha! That means the baby is now closer to five weeks, than six! Augh! Lots to do to get ready! I am super excited to share one of my families favorite breads! APPLE SPICE!! This is Mikes favorite and no lie, I have made him a loaf to take to school before and he has literally eaten the entire loaf like a candy bar, not cutting it or anything!
There are a few steps, I wanted to take pictures of lots of them so…. lots of pictures! Hope you love it!
Oh and I use my favorite scoop from Pampered chef, it is the large scoop, I again am not getting paid for this, just wanted to share the one I love! You can buy it HERE!
Apple Spice Muffins Recipe
Chop up lots of apples! You need 3 cups of peeled, chopped apples. I think granny smith, braeburn, fugi or Cortland are the best. I would not use red delicious or golden.
In a large bowl mix together: 3 cups of flour, 1/2 tsp baking soda, 1 tsp salt, 2 tsp cinnamon. Mix that well. Set Aside.
In a mixing bowl, cream together: 2 cups of sugar, 1 1/4 cups of vegetable oil, 3 eggs and 2 tsp vanilla.
Once creamed together, slowly add in flour mixture until mixed thoroughly.
Stir in chopped apples.
You can put in a greased loaf pan or place in greased muffin liners. Here is my favorite scoop! Please don’t mind my super old cupcake pans! Holy cow those are well loved!
Bake at 325 loaves 1 hr 15 min, muffins 20-25 min. Let them cool for about ten minutes before removing bread from pan, muffins you can remove right away!
ENJOY! I like to freeze them too, last week I made about 8 dozen and froze them for baby time breakfasts!

- Peel and Chop apples set aside.
- Mix flour, baking soda, salt and cinnamon and set aside
- Cream sugar, oil, eggs, vanilla in a large bowl.
- Once creamed slowly add in flour mixture until well mixed.
- Stir in chopped apples.
- Scoop in greased loaf pans or greased muffin liners
- Bake at 325
- Muffins 20-25 min
- Loaves 1 hr 15 min.
- ENJOY!!
Messy Moment!
I walked in on Lucy reading to Marsha :) very sweet right? They were sitting on the dining room table, Marsha had taken off her shirt and they had a plate of buttercream frosting! Haha! Thank you Lucy! I had to of course take some pictures and then get them down! I love their faces in this picture! Makes me giggle each time I look at it!

I will be adapting this for gluten free! How many pounds of apple do you think you used? Do you have a magic apple chopping method/trick/tool? or just the patience to do it yourself.

I use about one med apple per cup, sometimes, I may need an extra apple depending on the size. I just do it myself! There is an apple peeler corer you can buy, pampered chef carries them, most big stores carry them also. Those work too!

I made a gluten free version of your apple muffins. I did loaves and am happy with how they turned out. I do need to master the size I cut the apples, to get them just right.
