It is April fools day! Fun day ahead! Full of innocent pranks and lots of laughs! Full of a delicious April Fools Dinner….. We do everything a little backwards today and I love it~ It is also the first! WHICH MEANS…. my birthday is three weeks from today! WHOOHOO!! I love birthdays! I mean I love them! I get more excited than some kids do! I am not sure why, I just think they are so fun! So be prepared for lots of countdowns!
I am so excited to share our April Fools dinner! I have to apologize that there are not really any pictures of us enjoying it! I am still having such issues with my camera! GRR! But the ones we have are great!
HERE is Dinner!
In case you are wondering how to make this fantastic dinner…. Here are the super easy instructions!
MEATLOAF:
I use Chocolate Rice Krispies, I used six cups.
Melt one 10 oz bag of marshmallows and 2tsbp butter. Melt the marshmallows like normal to make rick krispie treats.
Get your dried pineapple and cranberries ready!
Chop them to your normal size of onions in your meatloaf. I think a bit chunky looks good in this recipe. I used 1/2 cup each.
Grab a loaf pan and make sure you spray with it nonstick cooking spray. This recipe makes two loaves.
Mix it all very well and pour into the loaf pan.
Get your hands wet, ( this is so it does not stick to you!) and pat the rice krispies down so they are nice and solid.
After they cool for about 30 min, take them out and slice as you would a meatloaf! See the little bits of onion and tomato!
I served them “dinner” I also used vanilla ice cream for mashed potatoes and caramel sauce for gravy. Those are real asparagus. YUMMY! The kids were fooled! Tucker dipped his “meatloaf” in ketchup, that was so gross/funny at the same time!
NOW ON TO DESSERT!!

Make your meatloaf, this is my favorite recipe HERE! It is really easy too!
Pat each muffin spot very well, remember meat shrinks so pat them really well! Cook at 350 degrees for about 35 min. After they are done, twist them and they will come right out. Put each one in a cupcake liner. DO NOT COOK THEM IN A CUPCAKE LINER! TOO GREASY!
ON to the icing! Use instant mashed potatoes. I know they don’t taste as good as real but they are so smooth and creamy that it is perfect for icing! I just followed the directions on the box and added food coloring to the water as it was boiling!!! Then I put the potatoes in one of my piping bags and there you go!
I think it looks so pretty! The kids at first wanted me to put “icing ” in their mouth! Boy were they surprised! Pretty little cupcake!

We did this one year, telling the kids they had to eat their dessert first. The “frosting” was too sweet! They wouldn’t touch it. We moved on to dinner, (“chicken pot pies” that were really pudding pies with candies inside) and the kids wouldn’t touch it either. Needless to say, April Fool’s hasn’t become a big tradition in our home. Maybe I should do jello drinks to surprise them.
