Happy Thursday everyone! It is almost Easter! Tomorrow is Good Friday! I love Good Friday, I love Easter…. okay I love the whole holiday! It just reminds me to be grateful and to try harder to be better! Anything that makes you feel happier and more grateful is a great thing I think! Remember a few weeks ago, not sure why but it just feels like there are big changes and exciting things happening? I still feel that way and I am excited for whatever that feeling means!
I wanted to share my sister Tiffany Balloon Biscuits. They are also called Resurrection Rolls, they are a tradition at our families Easter Brunch every year! This year, Tiffany won’t be there. Big Bummer! So I am going to make them, that way we can still have Tiffany there is our hearts! It is a very, very easy recipe and quite yummy too!
They are made with simple biscuits in the can, marshmallows, cinnamon & sugar and baked! They are called Resurrection rolls, because you make them with a half of a large marshmallow and after you bake them the marshmallow is gone! Much like Jesus Christ, he was recurrected and is no longer in the tomb. Great little lesson for little ones and delicious lesson too!
Here is how you make them.
Everything you need! Large Marshmallows, butter, cinnamon, sugar and biscuits!
Place half of a large marshmallow in each biscuit
Seal the biscuit very well! Make sure there are no little holes or it will be a sticky mess!
Melt your butter and mix your one cup of sugar with a tablespoon of cinnamon.
Roll the biscuit in the butter and then in the cinnamon sugar.
Place in a greased muffin liner.
YUMMY! I may need some new pans! Geez!
Bake in 350 degree oven until golden brown and delicious! The marshmallow has melted making a delicious and quite sticky yummy center! I promise they won’t last long!

HERE IS THE RECIPE ALL AT ONCE!
One package of canned Biscuits ( you can use homestyle, or buttermilk)
Large marshmallows, cut in half (an average biscuit contains 10, so cut five large marshmallows in half.)
One cup of granulated sugar and 1 tbsp. cinnamon
1/4 cup melted butter
cupcake liners
Preheat oven to 350 degrees.
Take each biscuit, flatten it out a bit, place a marshmallow half and seal the biscuit around the marshmallow. MAKE SURE IT IS SEALED!! You could also roll the marshmallow in the cinnamon sugar mixture for a little more cinnamon flavor if you would like!
Roll in melted butter and then in cinnamon sugar mixture
Bake for about 10 min, until golden brown. Serve warm!
VERY EASY!!! If you use a whole marshmallow, it may pop out of the top of the biscuit, so make sure you cut them in half.
