Happy, happy Tuesday! Did you miss me this Monday? I missed you guys! It was just one of those days! Do you ever have those days? Where time just flies by and before you know it, it’s time for lunch, and then time to pick up the kids and then dinner and holy cow it is bedtime and you are so tired? That was me yesterday! The day just disappeared!
Today, I am here though! whoo hooo! I am super excited to share this recipe. I have only been meaning to share my breakfast burrito recipe for about 8 months now! Seriously! That is how long I have had it in my plans! Today is finally the day! Now, that it is time to post it, I am looking over my photos and thinking oh I should have taken the picture like this or added that. I apologize if they are not fabulous! If I hold off another day it may be another 8 months before I get around to it again! haha! So here it is!!

Brown your sausage, I just use regular pork sausage, the kind in the roll, I browned all of it up and even if I don’t use it all for the burritos, I freeze the rest. Once it is in the freezer, it is great to have on hand for quick add ins to pasta sauce, or on top of pizza. Did you know they sell sausage crumbles now? In the freezer section? IT is twice as expensive than just making your own…. save some money , make your own!
Scramble some eggs, I do 4 eggs, 2 tablespoons water, and 1/2 tsp salt, whip them good and scramble them! This makes four burritos.
Now, on to the fun part! The rolling! Get your kids involved! Kids love to help and this is pretty easy!
You can add cheese, sausauge, salsa, bacon, sauted peppers or just plain egg….. you be the chef! THIS IS WHERE I WAS WISHING I TOOK MORE PICTURES! There are so many different ways to make these!
Grab the bottom and fold it, kinda like when you are wrapping up a baby in a little blanket…….. gee can you tell I have baby on my mind? 9 weeks left!! You can fold down the top also~
Grab one side fold over.
Grab the other side and fold that over. Nice and snug!!
Wrap it really well in saran wrap, you can also use those perfect portions bags from ziplock, I make a massive amount and put them in a large gallon freezer bag labeled with what they are. My kids favorites are cheese and egg. Mikes favorites are cheese, sausage and egg.
To eat them, just heat them in the microwave for about 90 seconds. Perfectly hot every time! Gee that picture is boring! See I am doing it again! haha!
- 4 eggs
- 2 tbsp. water
- ½ tsp salt
- ¼ lb sausage
- ½ cup grated cheese
- 4 flour tortillas
- scramble eggs, I whip eggs, water and salt and scramble over medium heat.
- brown sausage and drain.
- lay flour tortilla out,
- layer in any order
- eggs,sausage, cheese and add any ingredients you like... salsa, sautéed veggies, bacon or just plain eggs... you be the chef!
- Fold bottom up and top down, then fold each side over.
- wrap tightly in saran wrap and freeze.
- To reheat, just throw in microwave for 90 seconds! Enjoy!
I hope these help in some way in the early morning rush of school days, work days or even church days! They are super fast and pretty filling! I really love that you are not just stuck with a bowl of cereal when you are rushing!
