Happy, happy Tuesday!! Okay, so in my “plan” for the week, I was supposed to show you breakfast burritos yesterday, then today well people….. it may be tomorrow! Not sure! Sorry to disappoint! I will be honest though… It has been a little busier than the norm for us! Even my menu has changed for this week! Roast on sunday turned into ham! Breakfast burritos turned into eggs and toast… it happens and that’s the real world! SO, no breakfast burritos but I do have some delicious and sooooo yummy CARAMEL CORN! Which hey is better than a boring old burrito ( just kidding they are great too!) Caramel corn makes a fabulous gift! It is quite easy!
Directions:
Preheat oven to 250 degrees. Spray the bottom and sides of a large roasting pan. ( I use one that can hold a turkey, at least 6 quarts)
ingredients:
6 quarts of popped corn( I prefer stove popped, but you can do microwave, even store bought)
1 cup (2 sticks) butter
2 cups packed brown sugar( light or dark is fine)
1/2 cup corn syrup( again light or dark is fine)
1 tsp salt
1/2 tsp baking soda
1 tsp vanilla
In a heavy saucepan over med to med low heat, melt the butter, once melted add brown sugar, corn syrup and salt. stir constantly with a wooden spoon or spatula until it comes to a boil. Once boiling do not TOUCH IT! Let it boil for 5 min, remove from heat, add baking soda and vanilla, and stir stir stir! it will get all foamy. Pour over popcorn and fold (not stir, stirring will break the popcorn up) popcorn until all coated. Bake for 1 hour, folding popcorn every 15 min. Let cool, break apart and enjoy! Store airtight! Great as a gift!

What should the popcorn be in while baking? Cookie sheet or baking dish??

Kristy, it should be in a large roasting pan, you will want one that can hold 6 quarts of popcorn. I use my big roasting pan that I use to make my turkey in! I can’t wait for you to try it!
