Happy, happy Tuesday! It is snowing! A LOT! I am in heaven! I don’t know why I love the snow so much…. but I do. I think it is just so beautiful….. the world in white, pure, clean, simple. I love it! I do not love the yucky slush that happens after a snowfall. But WORTH IT for the gorgeous scene that lasts a little while! Here is a bit of chaos for you today! Last night, it felt like a Friday, not sure why but it really did! We ate dinner, the kids played, we played Deal ( fun card game), the kids watched Elf, we made toffee it was so fun! It was also a Monday and so kids got to bed late…. uh oh! I let Charli and Lucy sleep in my bed. That was fine, a little crowded but okay. I woke up this morning about 4am, I somehow ended up with Tucker and Marsha in my bed too! SOOO CROWDED!! Holy cow! I felt like a sardine! To top it off, we all over slept! So the kids took their cereal this morning in a cup and ate it on the way to school! Great idea right! A bowl would spill easily! Brilliant I know! SO, tonight kids have to go to bed earlier and stay in their bed! I am so excited to share this chili recipe with you. My whole family loves it! YES kids included! You can make it spicier if you want. Also please note in the pictures I have doubled the recipe. Hey we have a huge family! You could also double it and freeze the rest, super easy to reheat. I have made this in advance and frozen it just to have a back up meal!
Here it is!
Ingredients:
Two pounds ground beef
One 29 ounce can tomato sauce
One 29 ounce can Kidney beans with liquid
One 29 ounce can pinto beans with liquid
You can use four 8 ounce cans or two 15 ounce cans, I have done both.
One cup diced onion ( average med size)
One stalk (1/4 cup) of diced celery.
Four medium tomatoes , chopped
Two teaspoons cumin powder
Three tablespoons chili powder
five teaspoons salt ( 2tsp with ground beef, 3 tsp with chili)
One and a half teaspoons black pepper
Two cups water
Method:
Brown the ground beef with 2 tsp salt. Drain and crumble to small pebble size pieces. Add 1 cup chopped onion ( med onion) and 1/4 cup diced celery (one stalk)
Mix well. In a small bowl, add 2 tsp cumin, 3 tbsp. chili powder, 1 1/2 tsp black pepper, and remaining 3 tsp of salt. Add that mixture to beef and stir well. Add 29 oz of each, kidney beans, pinto beans including the liquid. Stir well and add 29 oz of tomato sauce. Add four chopped tomatoes. I like Roma. Stir, and add 2 cups water. Simmer over low heat for 2-3 hours, stirring every 15-20 minutes. If you want it spicier add 1/2 cup of green chili, 1/2 tsp cayenne pepper or add a jalapeno or two!
Serve with grated cheddar cheese, sour cream, bacon and chopped onions….. Make a delicious meal by adding peasant bread!
