Happy, happy Wednesday! Wow, this week is flying by! I wanted to share a easy recipe, so I am sharing my granola!! YUMMY! My kids and I, well we all love the parfaits you can by at some restaurants. They are a $1.00 each! For a little yogurt, some berries and the tiniest package of granola out there! I knew there was a better way! I am going to share with you the granola recipe and later this week, share the parfait recipe. This granola is so good and so inexpensive to make. If you buy granola at the store you are going to easily pay $3.00 for a box, this not only tastes so much better but it is easier on your budget too! Today is rainy and wet, perfect day to stay home, keep warm and bake. I always love baking on rainy days…it just feels so cozy and brightens up our home. So get on some comfy pants; rainy days are also excellent for comfy pants, and grab your apron and lets get cooking!
Granola:
4 cups whole grain oats ( not quick cooking)
2 1/2 tsp of cinnamon
1/4 tsp salt
6 tbsp. plus 2 tsp of vegetable oil
2 tsp vanilla
1/2 cup honey
1/2 cup brown sugar (packed, we always pack brown sugar)
Optional: 2/3 cup each of nuts, raisins, coconut etc
preheat oven to 325 degrees
In large mixing bowl, add oats, cinnamon and salt. Mix together well.
In small bowl mix oil, honey, vanilla and brown sugar with a whisk, until all smooth and combined.
Pour sugar mixture over oats and stir until completely combined. Pour onto greased large cookie sheet in a thin layer and stir every ten minutes for a total baking time of 30 min. If adding nuts or any extras….. after ten minutes add nuts if they are whole, or chopped coarse, if they are thin sliced almonds add after 20 min. Raisins, craisins or coconut add after 20 minutes also. Cook the remaining 10 min, let cool and crumble apart. Store in air tight container. HELPFUL HINT: I like make a few batches and keep one batch in the freezer, then I can just pull out as needed. ENJOY!
