Happy, happy Tuesday! It is a beautiful day today, you know those days when you can just tell that rain is coming? I love those days! It’s like when you know you are going to get a chance to jump in the shower……….. ahhhhh. I am hoping it pours!

Today, I want to share with you our families favorite green bean recipe! I love green beans! I MEAN LOVE THEM! I could eat them every day! I have eaten a can of beans for lunch in the past… A few years ago, Mike’s mom was staying with us for an extended amount of time and on the 4th or 5th evening here, at dinner she asked” so do you like any other vegetables besides green beans?” I had to laugh! I have incorporated lots of veggies, but my favorite is by far the delicious green bean! I love canned and fresh, but fresh are the best!!
My kids love green beans too! This is the favorite of all of us! My friend Jen taught me this way years ago, and I have made it my own but I always think of her when I make them! Jen is one of those amazing women that seem to be gifted in every thing she does! I would love to just have a little of all of her skills! She was/is wonderful, she moved away, :( I miss her…. I need to call her…….. okay focus ! Back to the beans!! There are a few steps but let me tell you, worth it in the end!
Get some fresh green beans and rinse them!
Pop off the stemy end only! Not the pretty little pointy end. If you go to any high end restaurant and order green beans, you will see that little pointy end. AND hey, your own home can be a high end restaurant! Just pop off the end, in the picture I popped a bit more than I needed to so you can really see it well, but just take off the yucky stem part. This is a great thing to do with your kids, or hubby. Just grab some bowls, sit down and chat while popping beans!
Boil them for about 3 min in heavily salted water!! Then quickly shock them! The picture shows them being shocked, that means thrown in an ice water bath. let them completely cool off. So now you could either freeze them or throw them in your fridge for later or cook them right away!
Next and the final step before devouring them…… in a heavy metal pan or skillet add about 2 tbsp. olive oil and get it hot, add your green beans and sprinkle kosher salt ( yes you want kosher salt!) Toss them together until heated through out! You may have to test a bean or two :) my favorite part! You can add garlic or slivered almonds if you like. My favorite way is just salt!
There you go! In our house, at dinner there are rarely if ever beans left over! One time I totally overcooked them and while clearing dinner, Emma(14yr old) said ” holy cow, beans left over you don’t see that here!” I had to laugh that even she noticed that!
- 1 lb green beans, pop off the stemy end only!
- 5 qts boiling salted water ( ¼ cup salt to boiling water)
- 3 tbs olive oil
- 1 tbsp. kosher salt
- 1 large ice bath
- Prep beans, pop off stem ends only!
- Boil 5 qts or just a really large pot of water
- Add1/4 cup of salt, stir to make sure all salt is mixed in well
- Add beans all at once, stir often,
- Cook for about 3 min or until al dente.( a little hard still in the middle)
- Drain and throw quickly in an ice bath ( bowl full of ice and water)
- Make sure all beans are covered. Let completely cool
- In a large skillet or heavy pot, add 2-3 tbsp. olive oil
- Once hot add green beans and sprinkle 1 tbsp. kosher salt
- Toss beans until heated through out, feel free to taste and check!
- Add more salt if needed!
- ENJOY!

We love roasted cauliflower. Usually just tossed in oil and sprinkled in salt and garlic powder, but sometimes we add curry powder.
