Happy, Happy Tuesday!! Fall has arrived it seems! Leaves are changing colors, school is back in full force, along with homework :) Soccer games and outside chores fill every Saturday and it seems a sweater is mandatory daily!! I am excited for fall! What a gorgeous time of year, just take a few minutes and drive around…. just to look at all the different colors of all the leaves, trees and bushes. It will make you feel happier!
I love fall for good food too! Fall food is different than summer food, in my humble opinion. Summer is full of salads and grilled things, fall is robust! SO I am sharing Lasagna rolls!
Super easy and actually not very time consuming which is always a plus in my world! AND you can make ahead and freeze! Also they are in perfect portion size!
Okay, here they are! This makes 11 rolls!
Add 3 cups sauce, I use my own homemade sauce but you can use jarred or canned or whatever you have. I used a meat sauce, you can use a marinara or a meat. Really any red sauce you love! Have extra sauce about 3 cups for the topping. So a total of six cups.
To that I added 1 cup grated mozzarella cheese, 1/2 grated parmensan, and 1 cup cup of cottage cheese. You can use Ricotta instead of cottage, but depending on your budget and what you have in your fridge. Both will work just great! Mix that well and set aside.
Cook your noodles, al dente ( meaning to the tooth, so there is tiny bit of bite to it!) AND make sure you salt your water! Your water should taste like sea water!! After you cook them, Run cold water over them so they quit cooking or you will have a giant clump of pasta!
Take a noodle one at a time and lay it out flat.
Layer the sauce mixture over the noodle. I don’t worry about getting it to the edge, as you roll it , it will spread out a bit more.
Add a layer of cheese! You could also add some extras at this point. Spinach is good, or mushrooms…. have fun with it.

I lay them in a pan that I have sprayed with non stick cooking spray and added some sauce to the bottom to prevent sticking!
Line them all up! pretty right! Now, cover them with more sauce and lot of mozzarella cheese! I do not have a picture of this, how I forgot I don’t know, but I will say it was pretty! I place a single parsley leaf on each roll. Not only does it look nice, but you can see where each roll is also!
Bake it at 350 degrees for about 40 min.
Serve each roll on a bed of sauce! Add some peasant bread from HERE!! That was on the blog earlier! It is delicious! Throw in a salad or some fresh green beans from HERE! That my friends is a fabulous dinner!
- 6 cups total red sauce ( you can use a meat sauce, a veggie sauce whatever you prefer)
- 3 cups total grated mozzarella cheese
- 1 cup cottage or ricotta cheese
- ½ cup grated parmesan cheese
- 1 box of lasagna noodles
- cook lasagna noodles al dente( little bit of bite to them) run cold water over them and set aside.
- add 3 cups sauce, 1 cup mozzarella cheese, all the cottage and all the parmesan cheese, mix gently but well.
- Roll one noodle out.layer sauce, then cheese,
- roll it up.
- Place in a sprayed baking pan with a layer of sauce on bottom.
- Continue until pan is full.
- Cover all rolls with remaining sauce and cheese. I add one parsley leaf to each roll.
- Bake at 350 degrees for about 40 min.
- Serve on a bed of sauce. YUMMY!
