Happy, happy Wednesday everyone! Wow~ The day is flying by! I usually like to be posted and done by 10am, not today! This morning has been crazy! The kids and I had fun playing toy food, and blocks. We then moved into the fireplace room to play ball, my idea…. Well said ball hit the mantel and hit some pictures, needless to say glass everywhere and it was my fault! It is all cleaned up now yay!! I have moved playing ball into the sun room where there are pictures on the wall yet, I do need to that though, only lived here two years! That is another day!
I wanted to share my favorite meatloaf! I think meatloaf is such a great comfort food. It is warm and delicious and reminds me of growing up! I always end up making it on vacation too, one of my favorite memories with meatloaf was about 10 years ago, we were in Florida and it was almost the last day, I was making meatloaf and realized I had no oatmeal, no saltines…. no binder! What to do!! I looked through what I had left in the kitchen and found colored ice cream cones, you know the bright colored ones, pinks and greens. Well, I crushed them up, added to the meatloaf and shaped the meatloaf into little mickey mouse heads! The kids loved it and thought they were amazing! Always have fun with your food!
Today I will share the recipe without ice cream cones :) This one is made with oatmeal, but you could use bread crumbs or saltines. I don’t like bread, I think it is too mushy, bread crumbs are okay though!
Are you super excited! Here you go!
Finely chop one cup of onions.
Add onions to 2 pounds hamburger meat, and two eggs.
Add 3/4 cups of oatmeal ( NOT QUICK COOKING), 1/4 cup of water. Mix in 1 tbsp. salt and 1/2 tsp pepper
Gently mix that together! Do not manhandle the meat! It will make it tough! Tough meatloaf… not yummy!
Always, always, always make a little meatloaf patty, cook it and eat it! If it needs more seasoning or onions, add it in! It is a little meatloaf treat :)
Bake in a greased pan, I have a 9×13 that has a divider in it, I love it because more crispy edges!! But a regular baking dish is great! Bake it at 350 degrees for one hour!
Serve with a yummy salad and my fabulous baked potatoes, recipe HERE! You have a delicious dinner!

2 pounds hamburger meat
2 eggs
3/4 cup oatmeal ( not quick cooking!)
1 cup finely chopped onions
1/4 cup water
1 tbsp. salt
1/2 tsp pepper
In a large bowl, add all ingredients and mix gently, you don’t want to mash it or mix it to death, just very gently until combined. The extra water keeps it moist!
I ALWAYS ALWAYS ALWAYS take a little bit of the mixture and quick cook it and eat it. If I need more salt or onion I can quick add it, once it is cooked it is too late! SO really important to try a little patty…. Plus it is a tiny little meatloaf, when is that not delicious! Uh oh now I want meatloaf for dinner!
Place in a greased 9 by13 pan or like me in two pans :) I like the crispy edges! So two pans for me!

I am so excited! Tomorrow is my little sister Katy’s Baby Shower! I can not wait to share pictures! Katy is having her first sweet little girl and I am just so happy for her!
