Happy, happy Thursday! I have had just the best week! I had the best birthday on Tuesday! Everyone sent such lovely messages, or stopped by or called…. it was so wonderful and I loved every minute of it! I am so grateful for good friends!
I wanted to share this DELICIOUS and EASY recipe! I knew I had to share this when I saw a blog post about asparagus and they said they roasted it for 45 min… I said “what!” Out loud to myself! I was in such shock! NO! I thought! It was probably the mushiest mess of asparagus….I knew I wanted to share my simple and yummy recipe for in my opinion almost perfect asparagus. There are seriously days that I will just eat a pound of asparagus for lunch. My kids love it! When kids that are ages 1-14 love a veggie… that is a great sign!

Asparagus
Kosher salt
Olive Oil
Large cookie sheet!
That is it! SIMPLE SIMPLE!
Okay, so here are some helpful hints about asparagus,
1. store it standing upright. Best way is in a tall glass with a little bit of water in the bottom and lightly cover the top of the asparagus with plastic
2. There is a woody, not yummy part on the bottom of each asparagus stalk. When you are preparing them to eat you want to get rid of that. I will show you how in the pictures.
Wash and pat dry asparagus, this is one pound.
You want to trim each stalk, to do this grab near the end of the stalk and towards the middle, start to pull them towards you and it will naturally break where the woody part ends. Save the woody parts to add to soups or stews for flavor, you still won’t want to eat them! Look at Emmas cute hand! She was so proud of her nail polish! She did it herself!
Layer them in a single layer on a cookie sheet, and drizzle with about a tablespoon of Olive oil. Toss to coat them well.
Sprinkle with 2 tsp of kosher salt. You can toss them again if you would like, but then layer them again in a single layer.
Broil for Three to Five minutes, taste one… add a little more salt if necessary and toss a bit to cook both sides. Broil one to two minutes more until they are browned on the tips.
That is it! SOOO SIMPLE and SOOO GOOD!

This is for one pound of Asparagus!
Wash and pat dry asparagus.
Grab the asparagus at the bottom end and near the middle. Start to bend the ends together, the stalk will snap where the woody part ends! You can save the woody part for like soups and broths, still don’t eat it, but it is great for some flavor!
After they are all trimmed, drizzle with 1 tablespoon olive oil, and toss them to coat well.
Spread them out on a cookie sheet, I always put foil down on mine for this, not sure why…. but I do.
Sprinkle about 2 tsp kosher salt over the Asparagus. you can toss them together again, Spread them out in a single layer, once done.
BROIL! for about three to five minutes! Toss them a little, taste one see how your flavor is… if needed add another tsp of kosher salt and broil again for about 1-2 min!
THAT IS IT! They are so good and so simple! There is a nice little bite in the center of each asparagus! Not mushy!
