Happy, Happy Tuesday!! I hope you all are having a glorious day!! Excited for the fresh snow! I know it seems to some that it will never be warm again, but I already feel like winter is nearing to the end. Why do I think that? Well in the morning when I am waking up the kids, it is no longer deep, pitch black! The sun is coming up! I love it! I am also super excited that I will be sharing one of Mikes favorite snacks! SUPER EASY and DELICIOUS Potato skins! These puppies are perfect for football games, family game night or just yummy for a date night at home! Mike loves them and so do all the kids. I will admit, even I have been known to eat more than my share!
Don’t they look yummy!! They really are, I think the base is so important so please please bake your potatoes like HERE!!! They are the way to go! Yes that whole phrase will link you to the recipe!! It is that good! So please check it out! It is really quite simple!

After you have baked the potatoes and let them cool, yes let them cool! I have rushed it and holy cow can that be painful! hahaha! Okay so let them cool and slice them in half.
Scoop out the inside with a spoon, Try to get as close to the edge as you can. Be careful, you do not want to rip the potato skin. You can see the edge where the spoon has scooped out the potato.
Melt butter and brush on each potato skin. Be generous! For 24 potato skins, I use about 3 tablespoons of melted butter.
Broil the buttered potato skins f0r about 4-6 minutes, depending on your oven. Broil them until they are golden brown.
Get your toppings ready, I use crumbled bacon, chopped green onion and shredded cheese. Super simple and super delicious!
Sprinkle the potatoes with the toppings, I do cheese first, then bacon and top with green onion. put them back in the oven to broil for a few more minutes. Until the cheese is melted and delicious!
Serve with sour cream, I put a 1/3 tsp of salt and 1 tbsp of chopped green onion in one cup of sour cream for dipping! Serve warm!
- 6 baked potatoes
- ½ cup shredded cheddar cheese
- ⅓ cup chopped green onion
- ⅓ cup crumbled bacon
- 3 tbsp melted butter
- For dipping: 1 cup sour cream
- ⅓ tsp salt
- chopped green oinon,
- cut potatoes in length long ways.
- Scoop out potato pulp
- brush potatoes with butter
- broil 4-6 min or until golden brown.
- sprinkle cheese, bacon and green onion.
- broil again until cheese is melted and bubbly!
- Serve with sour cream (mix the sour cream with ⅓ tsp salt and chopped green onioin)
They really are quite yummy! You can keep what you don’t eat in the fridge and eat those for lunch the next day while you feed your kids peanut butter and jelly… not that I have ever done that!
