Happy, Happy Thursday! It is a lovely day here! Still snowing! I think it has been snowing for three days straight…. I LOVE IT! I haven’t had to drive anywhere either, I may feel differently if I had to go out in it! But for now, I am cozy in the house so let it snow! I am using this snowy time to clean the basement! WHOO HOOO! I will share pictures of that feat later but for today, I wanted to share a quick and easy and most importantly Yummy dish! Egg rolls! I love egg rolls! These are a simple egg roll, my mother in law taught me this recipe and I use it all the time. We actually had these for our new years eve dinner! Oh and you can freeze these for later! I will warn you, there are a lot of pictures to this! I wanted to show each step!
OKAY!!
Brown one pound of ground beef, use meat with some fat in it, do not use the super lean for this.
After meat is browned and crumbled into large pea size pieces, leave the juices in the pan. DO NOT DRAIN!
Chop or shred one and a half pounds of cabbage, I used red and green.
Mix cabbage into ground beef, pour in 1 cup of soy sauce and mix well, cook over medium heat for about 5 minutes or until cabbage is al dente, yes al dente is usually for pasta but you want a slight bite to the cabbage, it is not good mushy! Pour mixture into a colander and let drain and cool completely. I usually put the colander over the pan I cooked it in. It saves a dish! Mix it up often to cool it faster.
Get your wraps ready! I use egg roll wrappers and get a cup of water.
Use a heaping tablespoon and placed cooled mixture into center of wrapper.
Fold top over.
Tuck the top under the meat.
Fold over both sides, towards the middle.
Using your finger, rub water on the edge of the last corner.
Roll the egg roll edge up over the top! Pretty little package!
Pretty yummy things! You can either freeze them at this point or cook them. Fry them in oil at 375 degrees for about 3 minutes, if you don’t have a deep fryer, fry them in a frying pan and have the oil come up halfway, make sure you flip them!
For a easy sweet and sour recipe, here you go! In a saucepan, add 2 cups of water, 2/3 cup of sugar and 1/4 cup of vinegar.
Add in 1/2 cup Ketchup. Bring it to a boil and cook until sugar dissolves.
Make a thickening sauce with one cup of water and a 1/4 cup of corn starch.
Mix corn starch and water with a whisk until dissolved.
Whisk into sugar mixture and cook over medium heat until thick.
A great way to tell if it is thick enough. Dip a spoon in the sauce, pull it out and run your finger across the spoon. If the sauce does not drip down where you ran your finger it is done! If you want to jazz up this sauce, I will add 1/4 cup of crushed pineapple to it.

Ingredients:

One and 1/2 pounds of chopped cabbage.

Egg roll wrappers
Sauce
2 cups water
2/3 cup sugar
1/4 cup white vinegar
1/2 cup ketchup
thickening sauce
1 cup water
1/4 corn starch
Brown one pound ground beef, do not drain! Add in one and a half pounds chopped cabbage, and one cup of soy sauce, cook for about five min. Drain and cool completely. Once cool, place a heaping tablespoon of mixture on egg roll wrapper. Fold sides, the bottom over top. Fry in oil for about 3 min or 2 min each side, if not deep frying. For sauce. In saucepan add 2 cups water, 2/3 cup sugar, 1/4 cup vinegar and 1/2 cup ketchup. Bring to a boil and cook until sugar is dissolved. Make a thickening sauce by whisking together 1 cup cold water and 1/4 cup of corn starch. Whisk thickening sauce into sugar mixture and boil until thick. To jazz it up you can add 1/4 cup of crushed pineapple!

Marsha took a candy cane and was eating it, I saw her and tried to take it, she shook her head no and hid the candy cane behind her back! She is only 14 months old!
Charli is scared of Santa, we were playing games in the dining room, heard a tape and Mikey had a plastic santa outside staring at us! Poor Charli!
Played telestrations with the family, Mikes picture of a mermaid was like a zombie mermaid, arms out and everything. He did not do that on purpose!
