Happy, happy Monday!! How was your weekend? Mine was super! Busy, but super! I did not get really anything that I “needed” to get done, but I got a lot that I did not realize I needed to get done…. does that make any sense! Haha! Sometimes, we end up doing things that were not even on our radar, and they end up doing so much more than we thought. This weekend, I was able to spend an hour just playing with Marsha, and Charli, while we watched Lucy play soccer. Mike normally will run all the kids to soccer and I stay home with the little ones and get stuff done here or we will all go as a family to some of the games. We are not that amazing family that goes to every kids game… isn’t that terrible! It used to really bother me, but I need to be realistic, we have 3 kids in soccer, that would be a min. of three hours every Saturday just watching the games. Mike goes to all of them and the rest of us try to go to at least one.
Anyways, Mike was with Emma at her volleyball tournament and Lucys game overlapped, so I got to take the little girls and go hang out. It was so fun and so enjoyable. I was grateful to have that special time with them!

So a great weekend! Now on to a great week! I am excited to share a super simple and super delicious sandwich! EGG SALAD!!
I know simple right? A great egg salad sandwich can sometimes just hit the spot! I wanted to share my easy recipe that is kid friendly. I know some may add in pickles or relish… those are great and all, but sometimes not too kid friendly.
This recipe is super easy and my kids love it!
First off this is my most favorite tool ever when it comes to egg slicing, or strawberry slicing or even mushrooms, or olives…. it is an amazing slicer! Mine is super old as you can tell! I got this when Mike and I were married! 17 years ago this December! It still works! It is from Pampered Chef! I have a great pampered chef lady, if you want to order one, her website is HERE! I am not getting paid to say that in any way, I just really love this slicer!
Okay, so for this recipe, which is about 4 sandwiches, you need to slice four hard boiled eggs. slice them once, turn them around and slice the other way. You can see in the picture how it has been cut twice.
Throw all those chopped eggs in a bowl.
I add in 1/2 cup of mayonnaise, 1 tsp of mustard and 1/2 tsp of salt, and a quick dash of pepper.
Mix it really well, that doesn’t really look pretty does it? BUT it is delicious!!
Throw some egg salad on some bread, a little salad, some fruit and you have an AWESOME lunch!!
- 4 hard boiled eggs
- ½ cup mayonnaise
- 2 tsp mustard
- ½ tsp salt
- dash of pepper
- chop your eggs into bite size pieces
- add in mayo, mustard, salt and pepper
- stir gently to combine.
- Serve on bread! you could also just eat it with crackers too!
I hope you get to try this out! I sometimes forget how good the simple lunches can be, and how easy and quick they are!
