Happy, happy Tuesday all!! Hope your Monday was super! Yesterday, we had a super family home evening about being patient… can not wait to share with you , It was great and we ended with a walk around the neighborhood, more of a jaunt around the neighborhood…. holy cow those mosquitos are huge and vicious!! The poor kids look like they have chicken pox!
One week from today, school starts. It really is a bittersweet time. I am excited for the kids and all the fun adventures they will have! I am super excited for the teachers each of the children will be having, they are all fabulous! Especially the third grade teacher… holy cow he is hot! I am excited to see him for parent teacher conference! Heston will have him this year! His name is Mike Meier! Haha! Yes! Heston is having his dad as his teacher this year! He is really excited about it!
School is bitter sweet though, I miss the kids when they are gone, and yes the house will be a bit quieter, just Charli, Marsha and the new baby will be home, but it starts a new world of business. Getting everything in can be a juggling act. Emma has to be at seminary ( an early morning religious class, you can read about it HERE! if you want to find out more) at 5:50am and then Mike and the kids have to leave by 7:00am…. going to be busy early mornings!
With the new baby coming also, I wanted to make mornings as easy as possible! SO I have already started prepping for next week and the weeks after! I make freezer breakfasts!
I have in the freezer yogurt smoothie packets, breakfast burritos, granola , French toast and pancakes! Today I am going to show you how easy and how inexpensive it is to have your own breakfasts ready in the freezer!
Let’s make pancakes! Kids love pancakes!! Mike loves pancakes! I like pancakes! I like to make them all different colors, I did a plain bunch for you, but I will tell you right now I have blue and pink pancakes frozen in the freezer ready to go!
Okay first step! I love this pancake recipe by the way! I found it at pocketchangegourmet.com . It is very easy and I love that I can make a big bunch of it up at once and have it ready! Once you have found a recipe you love, start cooking! I like do this on a morning we are already having pancakes and just double the recipe. That way I am making one mess for breakfast and getting twice the meals!
IF you have a massive griddle that helps! I love this one, I can get 12 pieces of French toast, or 9 pretty large pancakes on it! We left it once in the dells and were so sad when we had to replace it with a smaller one… but My sister-in-law Emily to the rescue!! She saw we left it and sent it with her mom the next time she saw her!! OH that was a happy day!! So make your pancakes, cook them like normal… bubbles on the top and flip.
After they are done, let them cool completely on a wire rack. This is important, do not put them in baggies, still hot…. mushy city! After they have cooled, take them wire rack and all and place them in the freezer to freeze, I give it a couple of hours. You don’t need to cover them up in the freezer, you are not keeping them there for good, just long enough to freeze them.
Once they are all frozen, I pull them out and I wrap them in bags of two or three. That way each child has a complete serving in a bag. If I did one pancake per bag, that would be a lot of wasted bags! I love these freezer portion bags, my friend Heather introduced them to me and I LOVE THEM!
Then I throw them in a freezer bag, labeled with what it is and the date I made them. The kids will be able to simply grab a single serving bag and throw it in the microwave for 45 seconds. Super easy right! Hot, homemade breakfast every day! I do the same technique with French toast. Breakfast burritos are a little different and I will be sharing those soon! I hope you enjoy this idea! I hope you get to use it and it makes life a little easier in the morning. Let’s be honest, if we have one kid or eight… mornings can be stressful and hectic. If we do what we can ahead of time, mornings can be very enjoyable and a great time to connect with your family and make that day have a super, loving, happy start to it!
