Happy Tuesday everyone!! Hope your week is going lovely! I am super excited to share a homemade toffee recipe today!! It is one of my favorites!! Super easy and most importantly super delicious!!
First quick update! Going into the dr today, two appointments! One to check baby and one to check me! Hoping to hear that…. there is more dilation and really hoping I won’t have to be induced Monday! I want to be able to go this weekend or wait until next weekend! We shall see! We are almost ready for baby! I am freezing some meals today and still trying to get the house clean…. seriously for the love, will that ever stay clean! :) I know the answer! Yes, when the kids move out! So wish me luck today!
Now, on to the yummy stuff! TOFFEE!! My mother in law shared this recipe with me years ago. It is one my favorites, although I will tell you I am really excited to try my friend Stacy’s recipe! She was on my fabulous five last week for her toffee that had dark chocolate! and nuts on both sides! I am looking forward to that!
I took lots of pictures so you can see the process!
In a nice thick saucepan, melt two sticks of butter on medium heat.
Add in 1 cup sugar and 3 tbsp. of water. Just mix it up real quick.
Next add in generous 1/2 cup of slivered almonds.
Stir constantly on medium heat until the mixture turns golden brown, I think it needs to look like dark sand. USE A WOODEN SPOON!!
YUMMY!! Doesn’t that look so good!
Pour mixture onto ungreased cookie sheet, it will be soooo hot, so be careful! Using your wooden spoon, smooth it out as thin as you would like it!
Top with chocolate, now this varies on the day for me, if I have it in my budget, I buy chocolate bars, if not chocolate chips are fine! I use milk chocolate…. however after last week I may be trying bittersweet!! Pour the chocolate on immediately!
After it has started melting, gently spread over all the toffee! Get every little nook and cranny!
Top with crushed pecans or walnuts….. both are delicious to me! I use about a 1/2 cup, you can use more or less! Let it cool, that is the hard part…. but be strong!!
How delicious does that look? YUMMY!! It is so good seriously! I am not a big sweets eater, but when this is made, EVERY time I walk past it I take a bite!

This isn’t much different than mine, just halved. I add the nuts after the toffee has reached the hard ball stage, and then pour it out when it reaches the hard crack. And, of course, I enrobe in bittersweet chocolate.
