Happy Tuesday!! It snowed again! I love it! I am looking forward to the springtime! It is already mid February! Few more weeks until Spring Break! I love it! I know it is coming!!
I wanted to share this chicken recipe a few weeks ago! It seems like everything was getting in the way of it………NOT ANYMORE!! This is one of my favorite recipes and GASP! It is made with a can a cream of mushroom soup! I know! I very, very rarely cook with canned soup. This is a great one to make if you are going to cook with a can soup!
My sister Becky made this for me after we had one of our little ones. To be honest, I don’t remember which one it was! It was delicious and made with love, it was an instant favorite. Let me tell you about Becky. My sister Becky is amazing! She is a gifted decorator, her home looks like a magazine cover… ALWAYS! She is funny, so funny and kind. She has been with me for all of the births of my children, except for Emma. I just love to be around her. She is number seven in our family and eight years younger than me. It has not mattered. Becky is one of my best friends and I love that I can talk to her about anything. She has such a sweet spirit and such a love for others. She just makes you feel happy when you are with her. OH and the cutest kids! She has two boys and she just had a little girl! Vinny, Dominic and Gianna are adorable! I feel so blessed to call her not only my sister but my friend. OKAY! ARE YOU READY! Here it is, it is pretty easy. I like to serve it over rice, you could also serve it over mashed potatoes or pasta.
Cut up six chicken breasts or tenderloins into one inch cubes. place them in a greased baking dish.
In a medium bowl, add 1/2 cup water.
Add 1/2 cup soy sauce. ( can you tell I love soy sauce! HUGE container!)
Add in 1/2 cup vegetable oil.
Add in two cloves of minced garlic.
Now time for the spices! Add 2 tsp ground ginger.
Add 1/2 tsp ground sage.
And finally 2 tsp brown sugar.
Mix all of that really well.
Add two cans of cream of mushroom soup! I happened to have healthy choice ( my mother in law got it for me!) You can use regular cream of mushroom soup. I usually do!
Mix it all together, I use a whisk, I like it smooth and creamy!
Pour over the chicken, see SIMPLE!!!
Cover with tin foil and bake at 350 for an hour and a half. You can sauté some mushrooms too, I should have done that but I was out of mushrooms….. bummer!
My favorite! Served over Rice! I could eat the entire pan…… seriously! I hope you try it out! You could easily half it or invite the missionaries over and ta-duh! dinner! What is your favorite meal that someone has given to you???? I would love to hear!

-family home evening last night, we played a game getting to know each other better! Hestons favorite book is Amelia Bedelia and I had no idea! I love that book!
-Marsha dances EVERYTIME there is music played, even church music, cracks me up.
-I had the house clean when the kids got home! YES!! It lasted ten minutes….but it was a wonderful ten minutes!
-During the game, my favorite place to be…. my answer was in daddys arms. All the kids were grossed out! But hey its the truth!
