Happy, happy Thursday!!! Another gorgeous fall day! I feel guilty for trying to get stuff done for this baby and not spending my days outside playing the entire day! I am trying to just go outside for a bit each day and enjoy it while it lasts! I know in only a few short weeks, snow could be here!
Today, I am sharing one of my all time favorite lunches! I mean all time! It is also one of Mikes all time favorite too! I saw it a few years ago, probably like 5 yrs ago, could be longer, on the Oprah Show and how long has that been off the air! So a long time ago… We have always called them “Oprah Sandwiches” I hope I don’t get into trouble for using her name! If she does read this, HI OPRAH!! I LOVE YOU!
They are super easy and in my opinion super healthy, at least that is what Oprah was saying! I usually eat two when I make them, Mike will eat two unless he is at school, then he only has time for one! POOR GUY! I think you will really enjoy them! Are you super excited and anxiously awaiting to see them!!
Here all the ingredients you will need:
WASA crackers ( these are vital! No substitutes! ) There are many varities of wasa crackers, I love the Multi grain ones the most, as pictured here!
Turkey Breast (the real turkey breast, not the cheap lunch meat slices. I get mine from SAMS club)
Pepper Jack cheese, now those who know me, know how sensitive I am to spicey foods…. this is the perfect cheese for this. I have made it with cheddar and it just wasn’t as good.
Lettuce
Tomato
Mayo ( not as healthy) or Miracle Whip ( healthier)
You can add extras, Mike and I both love avocado on it! Yummy!!
You want to put the mayo/miracle whip on the smoother side of the cracker… it is just easier! :)
I then layer Lettuce, cheese. I use three to four slices of thinly sliced cheese.
I add the turkey, this is like the real turkey breast. It is a little more expensive but the taste is worth it!
Add three thinly sliced tomatoes and I like to put a small dash of salt! Delicious!!
They are filling, delicious and pretty healthy! Try it with avocado also, you may really enjoy it! I make Mike these for lunch a lot…… I find it best to wrap in saran wrap. And you want to eat them the day you make them. I had made Mike two and he saved one for the next day, it was pretty soggy and sad! So don’t do that! I hope you have a super day! I am trying to get things ready for baby and not doing that great of a job it seems! Everyday there is more to be done! I have been meaning to do a baby update since 24 weeks! that was 11 weeks ago! Hopefully I can do that before baby comes! Any hints you all have on getting ready for baby, please share!!

Mike ran the kids to church and SAMS last night! Yay! ( hence the organized bedroom!)
