I am also super excited to share this yummy and super EASY recipe with you today! I love orange chicken! My husband Mike, loves orange chicken, and orange chicken is one of Emma’s favorite foods! SO a big win all around to cook this! I wanted something that was really easy, not too time consuming and above all that was delicious! This recipe nails every one of those! I found the original recipe HERE! I changed it a little, I did not use as much rice vinegar or eggs. Check out her blog sometime, she has some fabulous recipes!
Are you ready to be wowed!! Keep reading!
Ingredients:
Chicken:
1 1/2 -2 lbs boneless, skinless, chicken breast cut into bite size pieces
2 eggs
splash of milk
1 cup cornstarch
salt and pepper to taste.
frying oil preheated to 375 degrees.
Orange Sauce
1 cup orange juice
zest from one large orange
1/4 cup soy sauce
1/4 cup sugar
1/3 cup rice vinegar
1 tsp sriracha sauce
2 cloves garlic minced
4 tsp cornstarch
HOW TO:
Combine eggs, milk in a bowl, whisk well.
Place cornstarch in shallow bowl, season with salt and pepper.
Dip chicken in cornstarch , egg and then cornstarch again.
Fry in batches in preheated 375 oil. until golden brown.
Keep warm in 200 degree oven, I like to keep it on a cookie sheet so the chicken stays crispy.
SAUCE:
Combine all sauce ingredients, orange juice, zest, sugar, soy sauce, rice vinegar, sriracha, garlic and cornstarch until smooth. Heat over medium heat until thick, bubbly and reduced by half. Remember, the sauce is great when you dip a spoon in it and you can run your finger through the middle and the finger swipe stays clean. Look at the above picture!
Gently Combine chicken and sauce until chicken is coated, serve over rice. You can garnish with sliced green onions and sesame seeds.

Wish me luck today, both my little ones have that horrible hand, foot and mouth thing going around………… it is not fun!! Not even a little bit. Poor girls are itchy and feel terrible! One a positive note, it gave me a super idea for a blog post about what I do to make life easier with sick kids! I am working on it currently so look for it later this week!
I hope you have a super day! I plan on getting a lot done today, we will see! I also plan on trying to perfect a mock recipe of the caramel apple cider from starbucks……… I have been craving one of those since the weather became cooler!
If you have any ideas on how to keep sick kids happy, or the caramel apple cider………… please feel free to share!! Have a happy Tuesday!
SMILE BOOK:
Chicken and rice soup, last night it really hit the spot for the sick kids!
Mikey sold $18.00 worth of gumballs, I swear that kid is going to make a fortune before he is an adult!
The boys and Mike watching the football game, it is so nice to hear them enjoying it together. ( even if I have no clue what is going on!)
The new Forever show, I really liked it last night!
Asleep by ten pm, that was glorious!
MESSY MOMENT:
Last night, while getting Marsha ready for bed, I thought she was just wet, so she helped me take off her diaper and then she promptly ran away……….. not just wet…… poopy! A little bit of a mess to clean up! She thought it was so funny~ I will remind her of that when she is grown up!
