Happy, Happy Monday everyone! It is a gorgeous day! A little cool but that just makes it a cozy day, and who doesn’t love a cozy day! We had quite the weekend here! It was Charlotte and Marsha’s birthday party! Marsha turned one! Charlotte turned three! This was Charli’s first party and she was so cute! She said “It’s amazing!” I loved her excitement ! AND she was right! It was amazing! I will have to share pictures later, but for now I want to share with you a really easy and quite delicious recipe. It is roasted rosemary and garlic potatoes. Mikey, my 10 yr old, LOVES to cook! I mean loves to. All of my children love to cook, I am really happy about that I must say. Out of the older children, Mikey is the one who will cook with me at anytime. So he was in charge of this recipe and I think he did a fabulous job! They were delicious, we had them for dinner and everyone loved them! Mikey was so proud every time someone asked for more potatoes and so happy when they told him what a great job he had done! I was so proud of him too! I want to say, I know cooking with little ones can be hard. It can be kind of annoying at times when little ones want to help. DON”T GET ANNOYED! Let the perfection go, they are learning so much when you are with them. How do you react when they ask you can they help. Are you short-tempered? Do you snap? OR do you respond in a loving, happy tone. Even if the answer is no, you can always speak in a pleasant voice. I will admit that sometimes it is easier and so much faster to do things on my own, BUT is it the best way to do things? Am I loving my children and teaching them how to be a loving parent? Am I letting them know I appreciate their efforts in offering to help? I just think it is so much better to take a few extra minutes to let the 3yr old, pour the vanilla or stir a few times. Or take the extra ten minutes to let the older ones help cook and try it themselves. They feel that they matter and they are learning to serve others. Having Mikey help with the potatoes truly only added maybe five minutes and it was so worth it! When kids get to help they feel wonderful , I feel wonderful and there is more love and joy in the home. Okay… enough of the chatting! Lets get to cooking!
Ingredients:
3 lbs red potatoes
3tbsp olive oil
2 tsp Kosher salt
2 tbsp. rosemary garlic seasoning ( yes it’s already made! Sams club carries it and it is AWESOME!)
Preheat oven to 400 degrees.
First: cube all the potatoes, try to keep them about the same size. Put them in a large bowl. HELPFUL HINT: when you do that , they all will cook and be done at the same time!
Second: Pour the olive oil and stir to coat evenly.
Third: Pour the seasoning and salt over the oiled potatoes. Stir to coat evenly.
Fourth: Place potatoes on a greased cookie sheet and spread them out to a single layer.
Fifth: Roast for about 30 min, stir them after about 20 min. Roast until they are fork tender (means you can poke a fork through it no problem) and golden brown.
Plate them and eat! They are super easy, look gorgeous and taste yummy! Perfect side dish! AND look at how proud Mikey is! I will say, the entire meal, Mikey just beamed every time someone asked for more potatoes or said how good they were! It was so wonderful! So try it this week! Pick one of your children, or your husband if they don’t normally cook and have some fun! I would love to see pictures or hear what your favorite thing to cook with your family is! Have a super day!

So would you say the cubes are about an inch? bigger?

Yes I would say about an inch, as long as they are pretty uniform. You may have to increase or decrease cooking time depending on the size! love to hear if you liked them!
