Happy, happy Thursday! I have to tell you thank you! Thank you so much everyone! I received some wonderful comments yesterday regarding my post My “perfect” life. Your comments were kind and so thoughtful. I am glad to hear that I am not the only one who does not have “the totally pulled together ” life! We truly are all in it together and we should depend on one another more!
I have a busy day today, haha as if any day is not busy! But today is super busy, Mike has open house at school, in the morning and evening. The boys have piano and Emma has volleyball! I also had received a request for some more easy breakfast or lunch ideas!
This is one of our favorites! Perfect for early school mornings or hectic sundays! You know ..the yogurt parfaits at cMcDonalds? I loved those things! Healthy, easy and pretty inexpensive!
I use my own GRANOLA, I make it ahead of time and I keep it in the freezer. It stays fresh fabulously in there. You can find it HERE, or just search it on the blog.
I use vanilla yogurt, layered with just simple frozen berry blend, you can buy that at any grocery store. It is called triple berry blend. You could also just use berries you love, like only strawberries or only blueberries, I layer yogurt, berries, then yogurt, berries and top it off with granola. if the berries are frozen, like i forgot to take them out the night before…. I just quick defrost a bowlful in the microwave… no worries!
- one cup vanilla yogurt
- ½ cup frozen or fresh berries
- ¼ cup granola
- IN BOWL LAYER YOGURT, ½ cup
- Next layer
- /4 cup berries
- Repeat with yogurt and berries
- Top with granola and enjoy!
Super easy, I let the kids help. A lot of times, I will also just lay out a bunch of frozen fruit, the yogurt and the granola and let the kids layer their own. They think they are grown up and I know they are eating a great breakfast! This is perfect for mornings when kids are getting up at different times.

Messy Moment:
Yesterday I had my dinner planned out, remember I had like no food in the house! I had taken out hamburger to thaw, we were having nachos. I left for twenty minutes to take Emma to v-ball practice and when I got home, I wanted to get dinner started…… looked everywhere for that blasted hamburger meat. I checked the fridge, the freezer, the garbage, thinking maybe I had put it back. Checking everywhere trying to rack my brain of where I could have put it. I just knew I left it on the counter. Then I saw the stove….. there was a frying pan with a tiny remnant of cooked hamburger meat, and the grease left behind. I realized what happened. Marsha, Mike’s mom, came home and must have cooked it! I was like well, whatever, nothing I can do now. I told the kids after we were all done running errands and everyone was home we would have PIZZA for dinner! Thank heavens for $5.00 pizza at kmart! And I got the kids their school shoes at the same time… bigger bonus… the pizza ended up being free with my points on my kmart card! Whoo hooo!
