Happy Thursday everyone! It is really warming up here this week! We were able to spend an hour outside yesterday and play! I loved it! THE KIDS LOVED IT!! It was the first day in over a 160 days that hit 60 degrees! It was so wonderful! Looking forward to the rest of this warm week!
I wanted to share my favorite mashed potatoes recipe. I feel like we eat mashed potatoes about once a week! They are really good and great for left overs too! I will share a fun hot dog & mashed potato recipe later next week! But for today, I will share the potatoes!
All you need is…..
Wash and cube red potatoes for a family of 5 I would do 2.5 lbs, for our family I use 5 lbs and then I always have some left overs that I will use throughout the week for another meal in some way!
Place in a large pot!
Fill the pot with cool water until potatoes are covered by an inch or two of water.
To the boiling water add three tablespoons of salt! Stir well.
Boil until fork tender . remember fork tender is when a fork slides through easily.
Add 1/2 stick butter ( 4 tablespoons)
Add 1/4 cup of sour cream.
Mash really well!

Little pepper , tiny bit of butter just to make it pretty! You really can eat them plain!
Red potatoes ( these are my favorite for mashed potatoes) I use 5 lbs, for a smaller family, I would do 2.5 lbs.
Salt (3 tbsp., you may need a little more)
Butter 4 tbsp. ( 1/2 stick)
Sour Cream 1/4 cup
Wash and dice the potatoes, I leave the skin on. The skin is very soft so they are easy to eat!
Put the potatoes is a large pot, fill with cool water , fill about an inch or two over the potatoes
Heat until boiling, once boiling add 3tbsp salt. Taste the water, it should taste like sea water! If you need more add another tablespoon of salt. Stir it well
Boil until fork tender. ( remember that is when a fork slides easily through the potato)
Drain the potatoes
Add 1/2 stick of butter and 1/4 cup sour cream….. mash well! I use the old fashioned masher. It is my favorite! I love it so much more than the newer kinds.
IF the potatoes seem a little dry, throw in a splash of milk, like 2-4 tablespoons.
Serve with a little pepper and a tat of butter, if you desire. Quite honestly, they are good enough to eat alone and they should not need any salt added!
I like to give Marsha little mashed potato piles on her plate. Years ago, my sister Iris taught me that and I still do it, perfect little piles that are easy for little fingers to pick up and put in their mouths!
