Happy Thursday everyone! Can you believe it is mid May already! Time flies by! It is in the 50’s today, cold! So we are going to cuddle up here at home and what do I like to do on cozy days? Laundry and bake! So here is to a day filled with both! If you are needing some ideas on something easy and delicious, I have just the thing! Oatmeal raisin cookies! Cookies are super easy, other than the getting up every ten minutes to put in a new batch… they are easy and kids can help! I am trying something new, you guys let me know if you like it with lots of pictures or this way with just the one…. let me know!
Ingredients:
3 cups oatmeal (not quick cooking)
1 cup flour
1 cup raisins
2/3 cup granulated sugar
2/3 brown sugar
1/2 softened butter
2 large eggs
1/2 shortening
1 tsp baking soda
1 tsp cinnamon
1 tsp vanilla
1/2 tsp baking powder
1/2 tsp salt
In a large mixing bowl cream butter, shortening, and both sugars. Add in vanilla and add eggs one at time. In a separate bowl add, baking soda, baking powder, salt and cinnamon. Add to creamed mixture. Mix oats and flour together. Stir into creamed mixture and add raisins. Mix well. Drop by teaspoons onto cookie sheet. Bake in preheated 375 degrees oven for 9-11 minutes or until edges are golden brown. Let cool on cookie sheet for about a minute then transfer to cooling rack.
They are delicious!! I made these yesterday and I may have eaten a dozen……… seriously I was sick by the end of the day!
Update! it is only 39 degrees outside! So cold! I am off to get on another sweatshirt!
