Happy, happy Tuesday!! Guess what everyone, it is March 4 today and it snowed…. again…. like three inches! What! It is so pretty, but I know the little flowers are just dying to see the sun again! I am too! I am so excited to feel warm breezes and smell the grass! Pretty soon…. I just know it!
I love potatoes! Like love them, like more than chocolate! If you were to put two bowls in front of me and one had chocolate cake and the other had baked potatoes….. I am going for the potatoes… all kinds! Mashed, roasted, baked, frenched (French fries LOL!), hashbrowned.. the list goes on and now I am really hungry!
This is my favorite way to bake potatoes, I think you need to season the whole potato and this is a super way to do that! Once you try it, you may never want an unseasoned potato again!
Place the potatoes on baking sheet, preheat oven to 350 degrees.
Poke each potato three times, you do not want exploded potato in your oven, trust me it is not pretty!
Drizzle olive oil over potatoes and rub it in, all over both sides!
Sprinkle coarse Kosher salt or sea salt, I prefer Kosher, all over potatoes, again both sides!
Bake in 350 degree oven about 45 minutes or until the potato is fork tender. HELPFUL HINT: Fork tender is when you can easily slide a fork in and out of it.
DELICIOUS! It is so good! You can eat the whole potato! I always see people throw away the peel, not with this potato! Also, this is the ideal way to prepare potatoes for potato skins! That will be in a later post!
Okay so here you go one more time :)

Today is my brother in law Mike’s birthday! He is so kind, and so good to Emily. I think he is a really wonderful guy and I am grateful for him!
